The group is one of the leading bakery groups in South-Eastern Europe and is part of a major global baking group.
Compliance was fragmented across HACCP, ISO 22000 and BRCGS/IFS - multiple requirements, constant updates and the risk of fines. Reporting was manual, slowing decisions and leaving data inconsistent. Critical CCP/PC logs lived on paper, giving incomplete data, weak evidence and false positives. Process changes went uncontrolled, and data security and integrity were at risk from tampering and lost evidence.
We built a requirement library by standard and country, mapping requirements by site, product and line, with checklists and PRPs generated from the HACCP plan, document versioning, regulatory-change alerts and one-click audit packs. Connectors to ERP, WMS, LIMS and IoT feed scheduled ETL, predefined FSMS KPIs, real-time dashboards and scheduled reports, with data-quality rules and validations. A mobile, offline-capable app captures limits and tolerances with alarms, timestamps and e-signatures, all behind a controlled, workflow-driven change process with zero-trust security and immutable records.
A 7-member team over 18 months - a project manager, a solution architect, three engineers (one frontend, two backend), a QA engineer and a data engineer - working agile in two-week Scrum sprints with continuous testing and deployment, on a modular microservices architecture, with AI agent tools built for reporting and BI.
